I recently built the LACK enclosure (https://www.prusaprinters.org/prints/3673) for my Prusa Mk3S. As I decided to leave the power supply mounted on the frame and not move it, I wanted to add a thermometer to the enclosure, to check on the inside temperature. I found a lot of mounts/housings but I didn't want to run a sensor cable and/or embed a thermometer into the frame. I ended up buying this thermometer (https://www.amazon.com/gp/product/B07WX79T3R/) on Amazon for $10 and designed a simple housing to mount on the underside of the enclosure's lid. The thermometer has two magnets in the back, which I am using to secure the thermometer in the holder. This makes it easy to remove the thermometer, for example, to change its battery.
