He has his own PCB board based Host hardware for his Firmware that may be more your style and a bit more versatile, especially within his firmware offerings. The FlockHawk was designed as a dedicated device for finding Flock devices, in a keychain size, with an enclosure for ruggedness. His Esp32s3 instructions will be what you need to follow if you go this route.
