While you're fighting for your life, the Surgeon is fighting for your leftovers. They use it to grow their next batch of Stitched Abominations or brew their latest potion. Deny them the kill, and you deny them the fuel for their next gruesome miracle. You need to keep the enemy whole, or you're just feeding their power.
